Toad in the…Holey Moley These Are Good

This is a summery version of toad in the hole for all you comfort food lovers. It has asparagus, peas, leek and lemon zest in the batter mix. Which makes it all summery, fresh and delicious. If you don’t want to go the whole hog, then you could just add the lemon zest to your Yorkshire pudding mix, for a zesty twist roast dinner. 

Serves: 3

Oven: 220 deg C


2 asparagus per person 

Half a leek finely chopped

A handful of frozen peas

6 good quality sausages, or veggies sausages

150g plain flour

Zest of a lemon

3 eggs

1/2 pint of milk


Preheat the oven to 220 deg C, successful Yorkshire puddings need a hot oven.

Whisk milk, eggs, plain flour and lemon zest I a bowl until smooth.

Prick the sausages and cook in the oven for 10 minutes, add the leaks for a further 2 minutes.

Stir into the batter mix the asparagus and peas. Then cook for 30-40 minutes. 


Zest for Life Potatoes 

This is a genius way to add a bit of lemony, loveliness to your plain potatoes. It’s so simple but makes a combination made in heaven. 


New potatoes

Few pitches of sea salt

Squeeze of a lemon


Boil the potatoes as normal until cooked. In a bowl add the salt and lemon, and toss we’ll so that the potatoes absorb all of the juice.

Lemon Panna Cotta Have it 

This dessert is all Italian, creamy and sumptuous. I always order it at a restaurant as it’s nice and light but still sweet and satisfying. This version uses coconut milk, so it’s dairy free, and honey and maple syrup, so free from refined sugars. The lemon makes it zesty, fresh and zingy. I love this dessert. 

Serves: 6

Time: 10 minutes. Chilling time 5-6 hours, or overnight. So although it doesn’t take long to make, it does require pre- planning. I always make before bed and leave overnight.


1 lemon

3 cups of coconut milk

2 tablespoons of gelatine

3 tablespoons of honey

3 tablespoons maple syrup 

1 teaspoon vanilla extract


In a small saucepan whisk the coconut milk and gelatine. Allow the gelatine to start to set for 5 minutes. Add the vanilla and gently heat the mixture, continue whisking. Be careful not to boil it.

Remove from the heat and add the honey and maple syrup. Then give a squeeze of lemon. Grate the zest from the lemon into the mixture, and keep some for the top once set.

Pour into 6 small dishes.

Leave in the fridge for 5 hours, or ideally over night until set.

Silli Lemon Linguine

This fresh and super healthy recipe comes from Sicilian greatness. It transports you to a hotter, less wet, Mediterranean climate. This can be on the table in 10 minutes flat. I’ve replaced spaghetti with the courgetti, so it’s not heavy on carbs. You can experiment with other cheeses, as I have, as traditionally it’s pamesan. This is sunny bliss on a plate. 

Serves: 2


2 lemons

Drizzle of olive oil

2 Courgettes

Handful of manchego cheese (about half a block of cheese)




Sea salt


Gently fry the pistachios for a few minutes, until golden brown.

Create the spiral courgette pasta and place in a pan to of unsalted boiling water and cook for 3 minutes.

Mix all the ingredients together in a saucepan, juice of lemons, olive oil, basil and salt.

Add the finely grated cheese and put over a low heat until the cheese has melted.

Add the cooked courgetti to the pan and coat it in the zesty, lemon heavenliness. Then serve with a bit of rocket on top.
